Description

Oversees production operations.

Responsible for conception (in line with customer expectations and trends) and execution (including quality, finishing, controlling and directing prep, process and any other relative activities).

Responsibilities

Design menus and product lines that enhance customers' culinary experience while maintaining exceptional quality and final finishing.
Plan and direct food preparation and culinary activities.
Design cost proposals for menu items (incl. Ingredients and man hours).
Work with Procurement function to source high quality ingredients/raw materials in a costeffective manner.
Ensure adherence to regulatory requirements and best practice including HACCP certification.
Implement standardised final finishing/presentation guidelines for each product, and inspect displays regularly to ensure adherence.
Monitor inventory levels of commonly used ingredients.
Identify means and process improvements to minimise wastage.
Hire, train, and manage production teams and ensure constant team development.
Spot and resolve problems efficiently.
Ensure that all production equipment and implements are maintained to a high standard.
Perform adhoc, associated administrative duties as assigned by GM.

Qualifications

Minimum 10 years' experience in pastry production including 3 years' experience in a senior Pastry Chef/production role.
Diploma or higher in culinary arts/food preparation/food production.
Experience in HACCP certification and Essential Food Safety Training (EFST) by Abu Dhabi Food Control Authority.
Ability to track expenses and manage a budget.
Ability to lead, inspire and develop a team.
Strong passion for the art of culinary design.
Excellent verbal and written communication skills.

Salary:
AED10,000.00 per month

Ability to commute/relocate:
