- Toassign responsibilities to subordinates and to check theirperformance periodically.
- To assist in theoperation and be visible during entire mealperiod.
- To establish and strictly adhere to thepar stocks for all operating equipment and supplies, to ensure thatthe outlet is adequately equipped.
- To ensurethat the monthly forecasted food and beverage revenue figures areachieved.
- To strictly adhere to the establishedoperating expenses and that all costs arecontrolled.
- To ensure that the Restaurant ismanaged efficiently according to the established conceptstatements.
- All operating standards are adheredto in order to achieve the level of service established in theDepartmental Operations Manual.
- To conduct andassist the Back of House Manager / Chief Steward in monthlyinventory checks on all operating equipment andsupplies.
- To carry out monthly, quarterly,bi‐yearly, yearly inventory of operatingequipment.
- To control the requisitioning,storage and careful use of all operating equipment andsupplies.
- To conduct daily pre‐shift briefingsto employees on preparation, service andmenu.
- To attend twice a month Food and BeverageMeeting and Daily OperationsMeeting.
