Reports directly to the Executive Chef / Cluster Executive Chef.

  • Responsible for all matter relating to food production & stewarding areas and provides functional assistance and direction to the kitchen operation.
  • Coordinates functions and activities with other Departments of Central Hotels and Resorts.
  • Supervises the function of all the kitchen employees, facilities and costs and contributes to maximizing the overall Food & Beverage Departmental profit.
  • Works with the Cost Controller/Store Keeper in determining the minimum and maximum food par stocks. Ensure the completion of the market list in accordance with quality and quantity standards. Inspects all perishable food items received for quality.
  • Attends and participates in daily morning briefing & scheduled weekly departmental meetings and conduct meeting for Kitchen production and stewarding staff.
  • Inspects all kitchen area on regular basis to ensure facilities and equipment are in good repair, well maintained replaced, and practicing the preventive maintenance system as required.
  • Implements the HACCP standards; attends meetings and conducts training to the F&B Kitchen & Stewarding staff
  • Conducts regular briefings with the staff for daily and special events operations.
  • Adheres to safety and security and fire training standards and procedures.
