KEY ACCOUNTABILITES • Monitoring thestewarding team in the day to day operations • Ensuringthe proper use of and preventative maintenance of all machinery andequipment used. • Ensuring the neatness, cleanliness andorder of all kitchens, back of the house areas, storage areas,employee dining room, Stewarding Department machinery, carts andtables through constant monitoring and a vigorous cleaningschedule. • Maintaining controls against theft and waste.• Using proper sanitation and hygiene techniques as wellas the movement and disposal of garbage. • Maintaining thewash ware operation to ensure proper supply of clean silverware.• Controlling breakage of all small ware and assisting insetting up and carrying out inventories. • Maintaining allkitchen equipment and dish machines in proper working order;ensuring and controlling usage of cleaning supplies and maintaininghand washing facilities in kitchens. • Storing, stocking,inventorying, collecting, washing and restocking china, silver,glass and other equipment in designated areas. • Workingclosely with the Chef, to coordinate activities, •Responding properly in any emergency or safety situation Preferencewill be given to qualified candidates who meet the belowrequirements: • Minimum of 2 years' as aStewarding Team Leader experience in fine dining or premium casualrestaurant • Excellent communication, problem solving andorganization skills • Must have the necessarycertifications (PIC, BFH, etc.)Qualifications
