PURPOSE OF POSITION
Our resident junior butcher performs animal slaughtering and butchering of farm raised animals.
Breaking down carcasses into primary and secondary cuts - tenderizing, deboning, trimming, tying, grinding, and preparing of meat for cooking or creating specialized meat products.
QUALIFICATIONS /
CERTIFICATION / LICENSES

- Trade Qualified
EXPERIENCE
- 2+ years' experience
- Charcuterie experience highly regarded
KEY SKILLS / KNOWLEDGE
- Cutting, grinding and preparing meats for use in all sections of the kitchen.
- Cleaning and maintaining tools and equipment
- Knowledge of animal anatomy.
- Knowledge of meat cutting and techniques.
- Must be able to assist with production quality meat products biltong, boerewors, cured meats, sausages etc.
- Ability to use knives and other cutting tools.
- Knowledge of food hygiene and safety requirements.
- Adhering to food safety and sanitation controls.
- Manual skills.
- Precision and physical strength.
- Keeping records and inventory.
- Coordinating deliveries or order pickups.
