    About Wynn Al Marjan Island:
    On schedule to open in the United Arab Emirates in early 2027, Wynn Al Marjan Island has been created as an opulent and entertaining beachside destination for discerning guests to play and relax. Located less than 50 minutes from Dubai International Airport, this integrated resort offering 1,530 rooms and suites, 22 restaurants and lounges, a theater, nightclub, and five-star spa is currently under construction on a picturesque island that gracefully curves into the Arabian Gulf.

    About The Position
    Wynn Al Marjan Island is currently seeking an
    Executive Chef
    to join the resort's
    Main Kitchen and Employee Dining Restaurant
    team.

    Responsibilities
    The primary duties and responsibilities of this role are:

    • Lead and manage the Main Kitchen operations, including Commissary Production, Butchery, Cold Kitchen, and Staff Dining.
    • Ensure consistency and quality of all base products and mise en place supplied to multiple outlets.
    • Implement rigorous quality control measures across commissary operations.
    • Monitor production to guarantee uniformity of taste, presentation, and portioning.
    • Establish standard recipes, production guidelines, and continuous improvement processes.
    • Train, mentor, and develop a diverse culinary team, fostering a culture of excellence, respect, and innovation.
    • Collaborate with outlet chefs, F&B leadership, and senior management to ensure alignment and efficiency.
    • Oversee scheduling, task delegation, and performance management of kitchen staff.
    • Financial & Cost Control
    • Manage food cost, portion control, waste management, and inventory for the Main Kitchen.
    • Work with the purchasing and cost control departments to ensure best-in-class sourcing and supplier partnerships.
    • Support overall profitability while maintaining uncompromising standards of quality.
    • Health, Safety & Compliance
    • Ensure compliance with HACCP, local food safety laws, and Wynn's internal hygiene protocols.
    • Maintain the highest standards of cleanliness, organization, and kitchen safety.

    About You
    The ideal candidate for this position will have the following experience and qualifications:

    • Proven track record as an Executive Chef or senior culinary leader in luxury hotels, resorts, or high-volume operations.
    • Strong knowledge of large-scale production, commissary operations, butchery, and cold kitchen preparation.
    • Excellent leadership, communication, and collaboration skills with ability to work across diverse teams.
    • Expertise in cost management, inventory control, and production planning.
    • Passion for culinary innovation and delivering consistent excellence.
