Full job description
The Chef de partie is in - charge at a particular area of production in the kitchen. He is responsible in supporting the Head and Sous Chef in a busy kitchen delivering consistently high-quality food.
JOB DESCRIPTION:
- Follows the instructions and recommendations from the immediate superiors to complete the daily tasks.
- Preparing cooking and presenting dishes within specialty.
- Responsible to supervise commis.
- Coordinates daily tasks with the Sous Chef, consults daily with Sous Chef and Executive chef on the daily requirements, functions and also about any last minute orders/ events.
- Estimate the daily production needs and checking the quality of raw and cooked food products to ensure that standards are met.
- Ensure that the production, preparation and presentation of food are of the highest standard and quality at all times.
- Comply with sanitation and safety standards of UAE Health and Safety Regulations.
- As per the superior follow the portioning, quality & plating should be standard.
- Quality control of food, garnishing and portion size.
- Supervising the activity of junior & making constant efforts to keep food coast under control.
- Make store requisition on daily, weekly & monthly basis.
Other Skill Requirements
- Knowledge of all standard procedures and policies pertaining to food preparation, receiving, storage and sanitation.
- Ability in dividing responsibilities and monitoring progress
- Teamworkoriented with outstanding leadership abilities.
- Uptodate with culinary trends and optimized kitchen processes
- Good understanding of useful computer programs (MS Office, restaurant management software, POS).
- Credentials in health and safety training.
- Degree in Culinary science or related certificate.
