    • Type letters, reports and anyother mailing or correspondence including memos in an efficientmanner, to distribute or mail, keep copies in file, type menus,recipes etc.
    • Answer calls according to hotelstandards
    • Keep Executive Chef'sagenda updated and remind him aboutappointments
    • Update the kitchen utensilbudget
    • Update and distribute the HACCP policiesto all kitchen chefs
    • Check event orders andrecord any non-conformance

    Administration

    • Ensures proper requisitioning andcontrol of office supplies
    • Set up and maintainfiles according to an established system; keep a trace file andinform the persons concerned about the duedates
    • Keep file of all kitchen staff and screentheir movements within the department and keep the Executive Chefinformed accordingly
    • Keep the Chefoffice's organisation chartupdated
    • Monitor and file annual leave forms andforward copies to the HR department
    • Ensuretimely dissemination and response to all correspondence (email,fax, written)
    • Ensure security and upkeep of alldepartment confidential files
