    Description
    • Manage all aspects of the kitchenincluding operational, quality and administrativefunctions
    • Actively seek verbal feedback fromcustomers on a regular basis and respond to all guest queries in atimely and efficient manner
    • Ensuring adequateresources are available according to businessneeds
    • Manage the provision of food to Food andBeverage outlets and taking action where necessary to ensurecompliance with current legislation
    • Controlcosts without compromising standards, improving gross profitmargins and other departmental and financialtargets
    • Ensure team members have an up-to-dateknowledge of menu items, special promotions, functions andevents
    • Maintain good communication and workrelationships in all hotel areas
    • Ensure thatstaffing levels are maintained to cover businessdemands
    • Ensure monthly communication meetingsare conducted and post-meeting minutesgenerated
    • Manage staff performance issues incompliance with company policies andprocedures
    • Recruit, manage, train and developthe kitchen team
    • Comply with hotel security,fire regulations and all health and safety and food safetylegislation
    • Ensure maintenance, hygiene andhazard issues are dealt with in a timelymanner
    • Manage financial performance of thedepartment so all planning is in line with hotelobjectives
    • Ensure food control systems areadhered to so margins are on target
    • Regularreview of all menus with Food and Beverage manager to confirmofferings are in line with market trends
