- Ensures compliance with all food& beverage policies, standards and procedures by training,supervising, follow-up and hands onmanagement.

- Understands beveragecontrol including days on hand, perpetual inventory, beverage pars,portion control, costs controls, beverage potentials, mix of salesanalysis for beverage, issue & returns, food standards, andperiod end inventory.
- Monitors adherence to allbeverage control policies andprocedures.
- Attends pre- and post-conventionmeetings as needed to understand groupneeds.
- Comprehends budgets, operatingstatements and payroll progress reports as needed to assist in thefinancial management ofdepartment.
- Participates in the management ofdepartment's controllable expenses to achieve or exceedbudgeted goals.
