• Maintains the standards ofperformance as detailed in the Departmental Operations Manual toensure the efficient operation of the department in accordance withthe Policy.
• Ensures that guest needs andexpectations are met by providing a consistently high standard ofbakeries preparation and presentation.
• Assistsin establishing the identity of the outlet by providing thestandards of bakeries presentation required by each outletfollowing recipe standards.
• Is aware of themethod of preparation and the standard recipe for every menu itemsin his particular kitchen bakeries and follows the procedures atall times.
• Maintains all work areas, kitchenequipment and utensils to the high standards of cleanliness andhygiene required by the hotel in conjunction with HygieneOfficer.
• Co-ordinates with colleagues whenevernecessary regarding operational problems.
• Isfamiliar with the operational procedures of all equipment in thebakery and operates them in the correct manner to ensure themaximum efficiency and personal safety.
• Toassist in the implementation of the various food safety and hygienestandards including HACCP and other Municipalityregulations.
• To work closely with HygieneOfficer in implementing all hygiene and safetyprocedures.
• Participates in regular meetingsand briefings as may be scheduled.
• Understandsand abides by all safety rules, emergency procedures and fireprevention regulations.
• Participates in anyscheduled training and development program that may improvepersonal or departmental standards.
• Responds toany changes in the Food and Beverage function as dictated by theindustry, company or hotel.
• To be entirelyflexible and adapt to rotate within the different outlets of theKitchen Department.
• To carry out any otherreasonable duties as assigned by the Sous Chef and Chef deCuisine.
