Main Purpose:
To be responsible for the full running of the section. A Chef de Partie is also known as a line cook or even a station chef. In large kitchens each Chef de Partie might have several cooks or assistants.

Scale of Job and Authority Levels:
Responsible for the running of the section. To work in collaboration with the head chef and the rest of the house kitchen team. You will maintain high levels of service that consistently exceeds the expectation of our clients.


Duties and Responsibilities:

  • The Chef de Partie is expected to fill in for the sous chef, assuming their greater supervisory responsibilities are coming in to a more direct collaboration depending on the kitchen brigade, structure, either the head chef or executive chef.
  • To ensure that all stocks are kept under optimum conditions.
  • Ensure that all mis
- en place is always freshly prepared and on time.

  • To ensure that all dishes reach the hot plate and see that all dishes that pass are correctly garnished as well as checking the correct portion and size are presented on the correct serving dishes in the prescribed manner.
  • Ensure all sections are kept clean and tidy at all times.
  • To ensure that junior chefs and trainees receive the right training and optimum guidance and to ensure no horseplay is allowed in his section and that all staff are treated fairly with courtesy.

Professional Qualifications:
_

  • Culinary and/or college education and related industry and business experience.
  • Preferrably with valid PIC Training Certificate
  • Experience Type and Level:_
  • Should have a strong European culinary background.
  • Should have 2 to 3 years of experience as a Chef de Partie or similar role
  • Should be able to demonstrate that he can cook under pressure.
  • Should have creative flair and recipe ideas.
  • Strong focus on service excellence.

Technical Knowledge:

  • Complete knowledge of all kitchen functions and strong culinary background.
  • Ability to understand and analyze financial information, mainly food cost.
  • Experience with prioritizing, planning, and time management.
  • Basic knowledge of computers and mainstream software programs.

Salary:
AED5, AED5,250.00 per month
