General Manager


Reporting to :
CEO/Managing Director


Job Summary:


Responsible for the management and achievement of profit for all the food and beverage operations including the restaurants, bars, kitchen operations.

Adhere to local regulations concerning health, safety, or other compliance requirements, as well as brand standards and local policies and procedures.

Key Areas of Responsibility:

Ø Achievement of budgeted food sales, beverage sales, labour costs and profitability.

Ø Timely analysis of Food & Beverage Prices in relation to competition.

Ø Participation and input towards F&B Marketing activities.

Ø Competitive analysis every six months by calling competition and gathering data

Ø Development and maintenance of all department control procedures.

Ø Completion of monthly forecast.

Ø Attendance and participation at weekly F & B meeting and Department Head meeting.

Ø To assist in menu planning and pricing.

Ø Development and maintenance of department manual.

Ø Must have a complete knowledge of Fire Procedures.

Ø Assure completion of requisitions where deemed necessary.

Ø Assure the completion of weekly schedule and shift duties while :a. Maintaining a labour cost below the maximum of 15%. b. Assuring adequate and consistent

Ø Completion of monthly inventory.

Ø Directly responsible for larger groups overseeing medium and smaller groups:

Ø Liaise on an on-going basis with the Sales Department to ensure all client needs and requirements will be met.


Ø Work with the Chef, General Manager of F&B Operations and F&B Supervisors to ensure all arrangements and details are dealt with.


Ø Ensure a professional attitude and proper business attire when on property, ready to meet or service a client at any time.

Ø Staff professional attitude and proper meeting Company appearance and uniform standards.

Ø Teamwork-Relations with co-workers and management.

Ø Quality of Food & Beverage services and department phone handling.

Ø Ensure all staff have 'Smart Serve' certification.

Ø Personnel selection.

Ø Proper hiring procedures followed. For management positions, either the HR Manager or the Asst. General Manager must join the Director of Food & Beverage for all interviews.

For line personnel, the Assistant to the Director of Food & Beverage must be present with the Food & Beverage Supervisor.

Ø Proper termination procedures must be followed.

Ø Department meeting being held monthly. General Manager, Assistant General Manager and Human Resources Manager to be notified of meetings in a timely fashion.

Ø High employee retention.

Ø Personal development and growth.

Ø Discipline of personnel when required.

Ø Responsible for overseeing all scheduling within the department.

Ø Achieving service that exceeds expectations.

Ø Oversee the management of restaurants, bars and outlets.

Ø Oversee the management of the kitchen operations.

Ø Manage staff within the restaurant's organizational structure and human resources policies.

Ø Communicate regularly with food and beverage staffs and conduct effective staff briefings

Ø Provide a professional advisory and executive support service to the General Manager to assist in meeting strategic goals

Ø Establish systems which monitor the achievement of departmental goals

Ø Ensure compliance with business operations and hospitality laws.

Ø Work with sales to manage the development of new products and services.

Ø Develop quality management systems.

Ø With Purchasing Manager, develop and monitor the implementation of purchasing procedure.

Ø All other duties as directed by the Managing Director or Owner.


PREREQUISITES:


Education:

Post Graduate or Degree or three years Diploma in Hotel/Restaurant Management or equivalent.


Experience:

Ø Minimum of 5yrs F&B management experience.

Ø Working knowledge of various computer software programs (MS Office, restaurant management software, POS)

Ø Ability to spot and resolve problems efficiently

Ø Mastery in delegating multiple tasks

Ø Communication and leadership skills

Ø Up to date with food and beverages trends and best practices

Ø Ability to manage personnel and meet financial targets

Ø Guest-oriented and service-minded


Willing to travel and work between Jeddah and Dubai

Job Types:
Full-time, Permanent, Contract
