SUMMARY OF POSITION


The Commis cooks and prepare a variety of food products including meats, seafood, poultry, vegetables, sauces, stocks, breads, and other food products using a variety of equipment and utensils according to the Daily Prep List.

DUTIES & RESPONSIBILITIES

  • To work in a quality control organization, adhering to policies and quality standards in all daily tasks
  • Complete opening and closing checklists.
  • Refer to daily prep list at the start of each shift for assigned duties.
  • Prepare a variety of meats, seafood, poultry, vegetables, and other food items for cooking in broilers, ovens, grills, fryers, and a variety of other kitchen equipment.
  • Understands and complies consistently with our standard portion sizes, cooking methods, quality standards and kitchen rules, policies, and procedures.
  • Portions food products prior to cooking according to standard portion sizes and recipe s specifications.
  • Maintains a clean and sanitary workstation area including tables, shelves, walls grills, broilers, fryers, pasta cookers, sauté burners, convection oven, flat top range and refrigeration equipment.
  • Closes the kitchen properly and follows the closing checklist for kitchen stations. Assists others in closing the kitchen.
  • Attends all scheduled employee meetings and brings suggestions for improvement.
  • Promptly reports equipment and food quality problems to Chef de Partie.
  • Follow kitchen policies, procedures, and service standards.
  • Should be an active learner.

QUALIFICATIONS

  • Be able to communicate and understand the predominant language of the restaurant trading area.
  • Having a Culinary Degree or minimum of 2 years of experience in varied kitchen positions including food preparation, line cook, fry cook and or culinary school
  • At least 1 year experience in a similar capacity.
  • Must be able to communicate clearly with managers, kitchen and dining room personnel and guests
  • Be able to work in a standing position for long periods of time

KPI

  • Ensure Recipe cards are followed, and production levels are monitored and adjusted due to demand.
  • Implement HACCP System, ensure the kitchen meets all the standards required Staff is trained and supervised of keeping the standards at the expected highest levels.
  • Monitor the wastage and food recycling
  • Assuring the mise en place is ready on time and as per the standards
  • Effectively report any maintenance required to avoid affecting the operations
  • Timely manner reporting to the senior
  • Work on developing the brand and bring new ideas

Salary:
AED2, AED3,000.00 per month
