Plan, schedule and supervise bakery production, shipping and cleaning activities to highest safety and sanitation standards.  Supervise, evaluate, train and schedule work of bakery staff.  Strong ability to read, write, follow written instructions and to handle mathematics pertinent to the job.  Extensive knowledge of methods and materials used in large-scale baking, including baking time, oven temperatures, shortenings, flavors, methods of mixing and the use and maintenance of modern bakery equipment.  Thorough knowledge of the types and grades of bread and pastry ingredients suitable for large-scale baking use.  Profound knowledge of the HACCP of institutional baking work and ability to observe adequate safety precautions
