- Meet daily with Executive Chef /Executive Sous Chef to communicate daily operational challenges& successes
- Attend daily Food &Beverage line – up in the absence of SousChef
- Promote a fun, professional anddisciplined work environment
- Support/coach/lead& motivate kitchen colleagues &managers
- Actively share ideas, opinions& suggestions in weekly Sous Chefmeeting
- Ensure all kitchen colleagues &managers are aware of standards &expectations
- Ensure proper weekly &annual vacation scheduling of all kitchen colleagues whilemaintaining The Fairmont Dubai's qualitystandards
- Implement HACCP standards in thehotel with the assistance of the Executive Sous Chef, HygieneOfficer and its members.
- Ensure proper hygieneas per Abu Dhabi Municipality, promote Health and Safety at alltimes
- Ensure all grooming, spot check andtemperature control sheets are filled asrequired
- Complete monthly one onone's, probation & annual reviews of kitchenmanagers as required
- Conduct daily walk throughto ensure proper cleanliness and follow -up
- Ensure consistent on-the-job trainingsessions for culinary colleagues & managers aremaintained
- Liaison daily with Outlet Managersto keep open lines of communication & guestfeedback
- Strive to improve all foodpreparations, presentations & menuselections
- Strive to achieve and surpass JDPower targets with kitchen colleagues
- Co- chairmonthly EES committee meetings with colleagues to address colleagueEES issues
- Creation of all foodmenu's for outlets
- Continually expandon our current food product to lead our colleagues to the nextlevel
- High school diploma orabove
- Minimum of 2 years previous experience ina similar role
- Strong knowledge of Food hygieneand safety regulations
- Ability to communicatewith customers and other staff members
- Strongleadership skills
- Strong communication skills,both written and verbal
- Good interpersonalskills
- Ability tomultitask
