    Theclient is seeking an experiencedExecutive Chef3 forClarksonUniversity located in Potsdam,NY. The Lead Executive Chef will be involved in all culinaryoperations and the ideal candidate will be an energetic, polishedCulinary Professional. Our Lead Executive Chef oversees our boardoperation, catering, and retail operations. Seeking candidates witha proven track record for developing, leading, and engagingculinaryteams.

    • Managethe daily food production including production planning andcontrols.
    • Ensuretheir Culinary Standards including recipe compliance and foodquality.
    • Managefood costing, controls andcompliance.
    • Developmenus and manageinventory.
    • Havehigh expectations for customer service and quality offood.
    • Havethe ability and willingness to develop and train frontlineemployees.
    • Havea passion for food andinnovation.
    • Haveknowledge of special diets and allergens and knowledge of DRIVE ispreferred.

    Theideal candidatehas:

    • Astrong culinary background, with the demonstrated ability to staycurrent with new culinarytrends.
    • Excellentleadership and communication skills with the ability to maintainthe highest of standards and implements companypolicies.
    • Previousexperience working in a high-volume facility and Strong managementskills.

    Responsibilities:

    Providesculinary leadership within a large sized unit including menuplanning, program execution and staff management &training. Works directly with internal and external clientsmanaging the catering process from beginning through execution.

    KeyDuties

    • Implements& coordinates the culinary function.
    • Directs& trains cooks & utilityworkers.
    • Ensuresfood preparation & production meets operationalstandards.
    • Managescatering & retailareas.
    • Customer& Clientsatisfaction.
    • Financialmanagement to include food cost & labormanagement.
    • Managesfood & physical safetyprograms.


    Requirements

    1.Bachelor s Degree or equivalentexperience

    2.Minimum 3 years work experience in food or culinary servicesincluding restaurants, fast food, vending, catering services,institutional services, mall food courts,etc.

    3. Minimum 3years of ManagementExperience.

    4.Must be a US Citizen or Green Card holder. (Please indicatewhich)
