    • Update existing recipecosting with current purchase prices
    • Updatethe Opera system with new beverage recipes in the microsinterface
    • Verify spoilage reports and approvebeverage issues from outlets
    • Approve stewardsale issues and approve operating equipmentissues
    • Spot inventories in outlets at leastonce a month, also including Club Rotana
    • Perform yield test of meat, fish and juices
    • Check all Food & Beverage checks with KOTs and makequarterly, half yearly and yearly Food & Beverage revenuesand cost analysis
    • Market survey of foodproducts especially fruits and vegetables
    • Advise all concerned and raise alarms when expenses and cost arehigh and not in line with revenuesgenerated.
