SUMMARY OF POSITION


Sous Chef is responsible for giving support to the Head Chef in all kitchen functions including menu development, food purchasing, preparation, and maintenance of quality standards; sanitation and cleanliness; training of employees in methods of cooking, preparation, plate presentation, portion and cost control.

DUTIES & RESPONSABILITIES

  • To work in a quality control organization, adhering to policies and quality standards in all daily tasks
  • Making recommendations to the Executive Chef regarding succession plannings
  • Be aware of all financial budgets and goals.
  • Ensuring that guests are always receiving an exceptional dining experience representing true value for money.
  • Ensuring that all food items are prepared as per standard recipe cards whilst maintaining portion controls and minimizing waste.
  • Ensuring that food stock levels within the culinary department areas are of enough quantity and quality in relevance to the outlet reservations and function forecasts.
  • Ensuring that associate meals and associate dining services are of a consistently high standard.
  • Ensure that chefs are always in clean, tidy uniforms and are always presentable to be in guest view.
  • Ensure that all food preparation equipment is being used safety and correctly and that it is cleaned and maintained.
  • Ensure that all culinary operations manuals are prepared and updated.
  • Ensure that the culinary department adheres to all company and hotel policies and procedures.
  • Ensure that a consistent firstclass product of the highest quality is achieved and maintained in all culinary areas, whilst adhering to operational deadlines.
  • Ensure that meetings are well planned, and results orientated.
  • Be aware of new items, which are introduced onto the market and keep up with the lasted product trends.
  • Initiate relevant maintenance reports and work orders supported by the respective follow up of those items actioned.
  • Manage associates fairly and take a personal interest in knowing all culinary associates.
  • Project a positive and motivated attitude among all associates.
  • Spend time in the restaurant to ensure that the operation is managed well by the outlet team.
  • Frequently verify that only the highest quality products are used in food preparation.
  • Ensure that all food products received into the restaurant are of the required standard and quality and that they are stored and rotated correctly.
  • Responsible for the supervision of all stewards and their activities within the culinary department.
  • Ensure that weekly work schedules and annual leave planners are administered and filed correctly.
  • Ensure that the overall culinary department is motivated and that positive feedback on work performance is given.
  • To delegate responsibilities to subordinates as required.
  • Coach and counsel employees in a timely manner and in accordance with Company policy.
  • To act as manager on duty for the restaurant as scheduled.
  • Responsible for training kitchen personnel in cleanliness and sanitation practices.
  • Act as an extension of culinary Leaders to communicate food consistency & quality.
  • Oversee the training of kitchen personnel in safe operation of all kitchen equipment and utensils.

QUALIFICATIONS

  • Be able to communicate and understand the predominant language of the restaurant trading area.
  • Minimum of 5 years previous experience working in a busy kitchen environment at a similar level
  • Strong communication skills
  • Must have a minimum of 2 years of experience into French cuisine.
  • Must be able to communicate clearly with managers, kitchen and dining room personnel and guests
  • Show a passion for the food industry.
  • Excellent attention to details.
  • Must have the stamina to work for long hours based on business requirements.

Salary:
AED5, AED8,000.00 per month
